Valentines Shortbread!

Hello Lovlies

Today I wanted to share this easy & wonderfully sweet shortbread recipe!! Just in time for valentines this adorable cookies will steal the show and set the mood for a romantic valentines dinner!
I love to have little sweet treats around I love the feeling & aroma they give to a home. Shortbread has become one of my favorite things to put out since they maintain so well!
This recipe is the base for my orange lavender cookies in the previous post. Its easily customizable for a verity of combinations. I started by mixing 2 cups of flour, 1/2 cup confectioners sugar, 1/2 Tsp of baking powder. Mix until completely combined and add in 2 Tbs honey and 3/4 cup melted butter. Instead of lavender and orange I used 1 Tbs fresh lemon juice and 1 Tsp lemon zest. Mix until dough starts to form and turn out onto lightly floured surface. Kneed until dough comes together and roll out dough to 1/4 inch thick.

Now come the fun part! I used this cute scalloped cookie cutter with interchangeable inner cutouts. These cookies need a solid bottom and a cutout top. When your cutting out your cookies make sure you have an even amount of pairs!
Once everything is all cut out place on prepaid baking sheet and bake for 15 minutes at 350!
Let cool completely before adding your filling. I made a simple strawberry compote to use a filling. Take your strawberries and cut into fourths place in pot and sprinkle with sugar. Cook on medium until it resembles jelly and place in fridge to cool.
Once cookies and jelly have cooled its time to fill them! Place a 1/4 teaspoon of filling onto center of cookie. Place cookie with cutout center on top and repeat process until all cookies and sandwiched together! Dust with powdered sugar and enjoy!!
