Potato Rolls!

This is quickly turning into one of my favourite side dishes! Its not the quickest to make but its worth the time and mess! This is my new go to for all my leftover mashed potatoes. You can make them even better by pouring over some homemade honey butter while they’re still in the oven.
Let’s Get Started!

Ingredients!
1 1/4cup cooked and mashed potatoes (about 2 cups pealed and chopped raw potatoes)
1 package active dry yeast
1 whole egg
4tbs salted butter
5 cups all purpose flour plus some for working dough
4tbs honey
1 cup potato water if using leftover potatoes regular water works fine too.
For this recipe a stand mixer with a dough hook works great. If you don’t have access to one you can just kneed by hand. In a large bowl add warm water around 110 degrees if it’s too hot it will kill the yeast. Pour water 1tbs of honey and packet of yeast into your mixing bowl; stir gently and let sit for 5 minutes until yeast is bubbling. Once your mixture is frothy and smelling good add in your mashed potatoes, egg, remaining honey and 4tbs of butter cut into tbs sized pieces. Mix until butter is melted and fully combined. 1 cup at a time mix in flour until the dough has formed a ball and is pulling away from the sides of the bowl.

Add additional flour if your dough is still wet. You want A elastic dough that will hold its shape but still slightly tacky. Kneed about 8 minutes. Transfer dough to a greased bowl; cover and leave in a warm place to rise for an hour or until doubled in size.
Once dough has doubled turnout onto a lightly floured surface. Work dough adding additional flour to keep it from sticking. Round dough into a ball and cut into 8 equal pieces. Take each piece and tuck edges under to make a smooth ball and place into a greased 9x13 pan. Once all the pieces are shaped and placed in the pan cover and leave to rise in a warm place for an hour.

After an hour rolls should’ve doubled in size. Place rolls in a preheated oven at 350 for 20-30 minutes until tops are golden. 10 minutes before rolls are done remove from oven and pour 1/2 stick melted butter onto the rolls. Place back in oven for remaining time. Let cool for 10 minutes and enjoy!!
