Parmesan Zucchini Fries!

Hello Lovelies!
Zucchini season is upon us! This time of year I feel like Im drowning in squash & zucchini. The garden is in full blown production & i struggle to keep up. Zucchini and squash are two things that just don’t store well. Canning is always an option but I prefer to freeze. Its faster and I don’t have to be in the kitchen all day! This recipe is perfect for fresh eating or freezing. I hope you enjoy these tasty zucchini fries!
Ingredients

Zucchini
1cup flour
1tsp garlic powder
1tsp onion powder
1tsp salt
1/2 tsp pepper
1/2 tsp oregano
1 large egg
1/2 cup whole milk
Olive Oil
Let’s get started!
Take your zucchini and slice too desired thickness. I prefer a steak fry shape but you can do whatever you like best! in a medium bowl combine dry ingredients. Mix flour, garlic powder, onion powder, salt, pepper, and oregano set aside. In another medium bowl whisk together milk & egg. Dredge the zucchini first in the egg wash then the flour and set aside.

In a large pan heat olive oil on medium-medium high heat. Place battered zucchini in pan and cook until golden brown 2-3 minutes each side. Place on cooling rack and sprinkle with parmesan. Plate and enjoy!
