Mrs, Roarks' Corn Casserole

This is one of those fabulous recipes I married into. Thank goodness for it too. I Love this recipe, and will take every opportunity to make it! Its so simple but oh so good, Its a staple for all family events and gatherings. I have modified this recipe a bit and will add my recommendations below along with the original.


Ingredients "The Original"

1 Can Cream Corn

1 Can Whole Corn (Don’t Drain)

1 Stick Of Butter

1 Cup Sour Cream

2 Cups Cheddar Cheese

1 Box Jiffy Corn Muffin Mix

This recipe is so simple no fuss no fancy order. Just throw all the ingredients into a large bowl mix and bake at 350 for 1 hour. I bake mine in 9x13 stoneware casserole dish. It gives it the best crunchy edges and I find it reheats more evenly.


Now let’s talk variations! You could make this so many different ways! Add jalapeños for some spice, bacon for some crunch. Or different cheeses for a creamer consistency! This recipe is so loved I rarely change it; other than to add more cheddar cheese. But if you wanted to try the out west version add in these ingredients.


Out West Corn Casserole (Add these to the original recipe)

8 slices of bacon cooked and chopped

4 jalapeños sliced into rings

1 4oz can diced green chiles

1 1/2 cups spicy Monterey Jack Cheese

Bake for an additional 15 minutes until golden brown
