Fast Fancy Focaccia!

Sea salt rosemary focaccia..... Need I say more? Summer, dinner outside pasta, and good wine. The smell of rosemary gives me all the summertime feels. It's my favourite herb fresh or dried, it gives so much flavour to any recipe! Let's get started on this fast focaccia!


When I say fast I mean faster then most bread recipes. This focaccia only requires 2 proofs the first is 1 hour and the second is only 20 minutes. So let's get cooking! First ALWAYS PROOF YOUR YEAST. This is a very important step. In your mixing bowl add warm water and honey stir and add in the yeast. Let that sit for 5-10 minutes until foamy.


For this recipe I recommend using a mixer with a dough hook. If not just oil your hands well before kneading to prevent sticking. Attach bowl to mixer and add in you flour & olive oil. Knead in low until dough comes together. Remove dough from hook and place in a greased bowl cover and leave to rise for 1 hour in a warm area. After your dough has doubled in size turn out onto a lightly floured surface. For this part I recommend turning your dough out on the sheet you'll be baking on; or placing it in your prepared 9x13. Gently roll the dough too desired thickness cover and leave to rise for 20 minutes.



Drizzle with olive oil and sprinkle with herbs. Take your fingers and poke the dough to flatten and shape. At this point you can get creative by adding in tomatoes, onions, herbs and anything else you would like to make a design or just add flavour. Sprinkle with sea salt and bake for 20-30 minutes on 400 until golden brown. Once out of the oven drizzle with

extra olive oil and enjoy!

Ingredients

1 1/3 cup warm water Bake at 400 for 20-30 minutes until golden brown

2tsp honey or sugar

1 packet active dry yeast

3 1/2cup all purpose flour

1/4 cup olive oil plus more for drizzling

sea salt & rosemary
