Buckeyes In The Snow!

Hello Lovelies!!


Today I wanted to share with you this recipe for Buckeyes! Or buckeyes in the snow... Ive never been able to master the art of buckeyes till now. Either they wouldn’t firm up enough to dip. Or the chocolate was to clumpy. The list could go on and on I tried a variety of things to fix the problems.... Finally we have the perfect recipe!! So lets get started!


So if you don’t have a microwave melt 6 Tbs. salted butter and let cool. I typically set it in the fridge for 10 minutes or if your in a hurry you can put it in the freezer for 5. In a medium bowl add 1 cup of creamy peanut butter & 2 1/4 cup of powdered sugar. Mix in melted butter. Line baking sheet with parchment paper and set aside. Scoop and shape your peanut butter mixture roll into balls and place on prepared baking sheet. I used a teaspoon to keep them all uniform. Also you can add chocolate chips for a extra crunch!


Once you have finished shaping your buckeyes place them in the freezer for 15 minutes. This will keep them firm while you dip them in the melted chocolate. While they chill melt 1 bag of semi sweet morsels and 5tbs butter. You can swap the butter for 2 large tbs coconut oil. Melting chocolate without a double boiler can be tricky. To hot your chocolate will burn, to low it wont melt, not enough oil it wont dip nicely. You really have to eyeball it. You want it to look glassy and have a lot of slip to it. Once you get close to that look remove it from the heat and continue to stir. Fill a large mixing bowl with with hot water and place pot in the water. This will provide enough heat to keep you chocolate loose and dipable.


Remove buckeyes from freezer and get ready to start dipping. The peanut butter will warm up quickly so you may want to place them back in the freezer half way through to chill up. Take a toothpick and pick up each ball and dip in chocolate. If they've chilled long enough you should be able to use 1 toothpick to dip them all. Once you've dipped them all place back in freezer to firm up roughly 5-10 minutes! Then serve and enjoy!!
