Best Ever Banana Muffins

Hello Lovelies!

Today I wanted to share with you my recipe for the best ever banana muffins! Its a really quick and easy way to use up those questionable bananas!
You can use this recipe for muffins or to make banana bread. The baking time will just be a little longer.
Start by smashing three ripe bananas in a large bowl. I like to use an all purpose masher with this recipe it works perfectly for smashing the bananas! Then add in your 3/4 cup sugar, 1/4 Tsp salt, 3/4 Tsp baking soda, 1/4 cup heavy cream, and 2 eggs. Mix well and add in 6 Tbs melted salted butter and 1 cup chopped pecans. Once combined add in 2 Tsp vanilla extract and 2 cups all purpose flour.

Once well combined add 1/3 cup of mixture to prepared cupcake tins. I used these cute heart shaped tins. Or pour mixture into lined loaf pan. Pre heat oven to 350 degrees. Bake for 15-20 minutes until toothpick comes out clean!
Once done leave to cool before icing! They fill the kitchen with a cozy aroma. Perfect for these gray January days. I use a simple cream cheese icing recipe that i've made for years. At this point I don’t even measure and just eyeball it till it looks and tastes perfect.
For my Icing recipe I use 1 8oz block of cream cheese, 1 box of powdered sugar and about 1/2 cup heavy cream and a dash of vanilla! Mix till creamy and plop it in a piping bag! I toped these with some chopped pecans and brown sugar. I hope you love this recipe as much as I do!
