Balsamic Glazed Roast!

Hello Lovelies!

This is my go to recipe for days Im busy, make ahead, or just want a rainy day comfort food. The weather lately has been rainy and gray and giving me all the fall feels. what could be more perfect then this slow cooker meal! Let’s get cooking!


The smell of caramelised onions and spices fill the kitchen and make my heart sing. You can make this recipe in a dutch oven or slow cooker. This time i decided to go with the dutch oven on the stove! All good recipes start with butter so melt 2 tbs of butter in your pan, slice up a medium onion and add to pan. Cook on medium heat till the onions look translucent on the edges. Pour in 1/4 cup balsamic vinegar and turn to medium low heat. Add in potatoes and carrots and other seasoning. Cook together till potatoes are lightly browned.


Now let’s add the meat

I prefer eye of round or bottom round but you can use whatever you like best. If your meat is frozen cook on medium high in the crockpot or medium- medium low on the stovetop.

Fresh meat you can cook on low. Add your meat to the pot and cover with beef or vegetable stock you want the meat to be completely covered so about 2 boxes of stock. Cook on low heat for 8 hours and enjoy!


You can also turn this into beef stew! It's my favourite thing to do with leftovers. Add 1 bag of frozen lima beans, 1 bag of pinto beans, and 1 bag of veggie soup starter! Server with cornbread or easy cheesy rolls! Enjoy


Ingredients


2 boxes of vegetable or beef stock

1 medium onion

2tbs butter

2 bay leaves

3 russet potatoes

4 cups pealed chopped carrots

1/4 cup balsamic vinegar

salt/pepper to taste

3tbs minced garlic
