Avocado Egg Rolls!

Hello Lovlies!!


I love avocados. Anything and everything avocado. So when we went on date night and ordered some avocado egg rolls, I thought I have to make these at home!


So this is my copycat recipe for these yummy avocado egg rolls! They’re surprisingly simply and we had the best time cooking them up! This recipe makes 8 egg rolls but can easily be cut in half.


I used 3 avocados, 2 tbs minced garlic, and 1 cup diced sweet onion. I used sweet onion because thats all I had, but I believe red onion would be better. We started by dicing the avocados be carful not to mash them. Lightly mix in onion, lime, salt, pepper & minced garlic. Cilantro would add wonderful freshness but is optional.


Heat your skillet on medium high heat and add oil until its 1/2 inch deep. Take your avocado filling, egg roll wrappers and lets start rolling! Place a small glass of warm water by your work area. This will be for sealing the edges of the wrapper.


Once you’ve used all your filling lets fry them up! Heat your oil to 180 degrees. Place egg rolls in oil and cook until golden brown.



Leave to cool for a few minutes. Slice and enjoy! I served these with a sweet mild asian sauce.
